FEATURES
The 2014 Jean Paul Droin Chablis Valmur Grand Cru comes from a highly regarded producer in Chablis. The Valmur Grand Cru vineyard is renowned for its Kimmeridgian marl soil, which imparts a distinctive minerality to the wine. The 2014 vintage in Chablis was noted for producing wines with good freshness and structure. Notably, this particular Valmur was crafted from young vines, aged 7 and 14 years, planted at a dense meter-by-meter spacing, yet it delivers impressive richness and complexity.
This white Chablis offers a beautiful and attractive nose, distinctly Chablisien, with prominent notes of chalk and crushed shells. The palate is crisp and inviting, featuring citrus, mouth-watering and sharp oily green lime peel, leading to a deep and long finish. It presents a highly restrained and cool nose with green fruit and ocean shore nuances, along with excellent richness and concentrated, intense medium-weight flavors that are both caressing and austere. Expect a fresh, saline attack, spicy notes, great weight, and persistence. Hints of citrus peel, stone fruits, minerals, peach, and yeasty flavors are also present. Some tasters also find plenty of fruits and honey on the nose, with ripe (sweetness) fruits, honey, mineral, a bitter taste of citrus peel, and a creamy texture, all well-balanced with acidity on the palate. Additional notes include lemon, lime, cream, yeast, oil, toast, biscuit, hazelnut, tropical fruits like mango and lychee, vegetal notes, elderflower, acacia, and mint.
Food Pairing: This Chablis Grand Cru pairs wonderfully with Manchego and Parmesan cheeses. It is also an excellent match for various seafood, including oysters, grilled fish, and goat cheese.
Fit for Event: This wine is drinking very nicely now but also shows potential for further development with a few more years of aging. It is an excellent choice for a sophisticated dinner or a gathering of wine enthusiasts who appreciate a complex and mineral-driven white Burgundy. 【A flavor-packed Valmur, seriously rich and impressive despite being from young vines】
