FEATURES
Domaine Jean-Paul & Benoît Droin, with a history dating back to the early 17th century, is a prominent producer in Chablis, owning 2.15 hectares in the Montmains Premier Cru vineyard. They employ a blend of modern and traditional winemaking techniques, including natural yeast fermentation in both stainless steel tanks and French oak barrels (with 30% neutral oak for Montmains). Benoît Droin is recognized for elevating the domaine, even utilizing machine harvesting for some sites due to its advantages.
The 2025 Chablis vintage is anticipated to be an early vintage with strong potential, offering a blend of contrast and promise despite challenging weather conditions. Growers successfully harvested healthy fruit, and the resulting wines are expected to combine freshness, balance, and confident aging potential. The growing season featured an exceptionally early budburst, followed by a cooler May and rapid flowering. Two significant heatwaves in June and August led to concentrated berries with thicker skins, contributing to aromatic intensity and structural depth. Despite the summer heat, alcohol levels are expected to remain moderate. Early tastings suggest forthright, balanced wines with appealing roundness and vibrant fruit, indicating excellent aging potential. Two stylistic profiles are emerging: a fresh, fruit-driven style with notes of pear and peach, lively acidity, and crisp tension; and a rounder, fuller style with subtle exotic nuances.
While specific tasting notes for the unreleased 2025 vintage are not yet available, Jean-Paul & Benoît Droin's Chablis Montmains 1er Cru is generally considered one of the richest and deepest Premier Crus, often described as "very 'Burgundian'" due to its richer rather than lively style. In its youth, it typically presents aromas of yellow fruits and apricot, along with hazel and roast almond, developing notes of brioche and toast with age while maintaining freshness. It is known for being focused and mineral-driven, with good concentration, cohesion, and salinity. Other common descriptors include citrus (lemon, grapefruit), minerals (crushed rock, oyster shell, flint), and subtle oak.
Food pairing suggestions include white meats in sauce, noble fish varieties, and at around ten years of age, it would be perfect with pan-fried foie gras. It also pairs wonderfully with oysters, seafood, fish terrine, gougère cheese-puff pastries, or cold meats.
This wine is an excellent choice for a sophisticated dinner, a seafood feast, or any special occasion where a high-quality, age-worthy white Burgundy is desired. Given that the 2025 vintage is very young, it is a wine to consider cellaring for a few years to allow its full potential to unfold. 【 Richest and deepest Premier Cru in Chablis, often described as 'very Burgundian' 】
