The 2009 Andre Beaufort Polisy Blanc de Noirs Brut hails from an exceptionally good Champagne vintage, characterized by a dry winter followed by much-needed spring rains that ensured successful budburst and flowering. Andre Beaufort is renowned for pioneering organic and biodynamic viticulture since 1971, with their Polisy vineyards featuring organically farmed vines on Kimmeridgian marls. This Champagne undergoes spontaneous fermentation with indigenous yeasts, native-yeast prise de mousse, long primary vinification, and extended sur-lattes aging, with disgorgement done à la volée.
This complex and traditional sparkling wine offers a very nice bouquet with notes of melon, lemon, honey, and minerals, complemented by strong, persistent bubbles and a creamy texture. Expect ripe green fruit, baked apples, white peach, apricot, lemon pith, and subtle saline and chalk minerality, alongside rich pastry notes of brioche and bread yeast.
