FEATURES
🏰 The 1986 Chateau Cheval Blanc is a 【distinguished representative of one of Bordeaux's most iconic estates, transcending the general reputation of a sturdy, tannic vintage】 with an artful blend of power and subtlety. While 1986 was generally known for firm tannins and long-term aging potential, Cheval Blanc's precision winemaking, particularly with a high proportion of Cabernet Franc, allowed it to retain freshness while developing deep, entrancing complexity. This wine offers a gorgeous bouquet of red berry fruit, meat juices, fennel, juniper, and wilted flowers, evolving with aeration to Virginia tobacco and cedar. On the palate, it's medium-bodied with melted, silky tannins, exquisite balance, and notes of Morello cherry jam, leather, black truffle, and a long, caramel-tinged aftertaste. It's considered at its peak now, yet capable of drinking well for many more years. 🍴 This elegant and complex red Bordeaux is a superb match for classic French cuisine, such as roasted lamb with herbs, beef tenderloin with truffle sauce, or game birds like pheasant. For a Cantonese pairing, consider slow-braised oxtail or a rich claypot chicken with mushrooms. 🥂 Ideal for a significant anniversary, a sophisticated corporate dinner, or a gathering of serious wine collectors looking to experience a benchmark Saint-Émilion at its mature best. It's a wine that commands attention and offers a profound tasting experience. For a wine of this age, careful handling is key. Stand the bottle upright for at least 24-48 hours before serving to allow any sediment to settle. Decant gently for 1-2 hours to allow the wine to breathe and reveal its full aromatic complexity, while also separating it from sediment. Serve at a cool cellar temperature, around 16-18 degrees Celsius (61-64 degrees Fahrenheit). Be prepared for a potentially fragile cork.
BACKGROUND
Chateau Cheval Blanc is a property in the Saint-Emilion region of Bordeaux, classified with the top ranking of Premier Grand Cru Classe A.The vineyard is located in the northwest of the region, bordering Pomerol – La Conseillante is a neighbor – and consists of 39 hectares (96 acres) divided into 45 plots. There is an unusually high amount of Cabernet Franc planted, about 49 percent, with 47 percent Merlot and 4 percent Cabernet Sauvignon. The unusual planting proportions reflect the terroir; most vineyards in the region are either clay or gravel-based over impermeable sedimentary rock, but Cheval Blanc is unique in having a patchwork of soils with the two types in roughly equal proportions. The clay soils provide base wines with velvety tannins, while those from gravel soils are more aromatic and elegant.
