In the glass, it presents a luminous appearance with soft, coppery shimmers and a sustained salmon pink hue. The aromatic profile is complex and alluring, revealing notes of citrus peel, red and black berry jelly (blackcurrants, blackberries, blueberries), sweet spices, candied violets, grapefruit pith, cherry stones, dried roses, white pepper, pastries, walnuts, and oyster shells. On the palate, it is distinctive, delicate, and charming, with harmonious flavours of panettone, candied clementines, and ginger, underpinned by a chalky edge and a persistent finish of citron zest. This medium to full-bodied rosé is fleshy, elegant, seamless, and pillowy, with bright acids and a pure, precise profile, culminating in a bright, saline finish. Some tasters also note hints of orange, raspberry, and brioche.
This exquisite Champagne pairs beautifully with delicate yet rich dishes such as poached lobster, or a tartare of sakura leaf, tomato and rhubarb.
