The 2020 Paul Lato Chardonnay Goldberg Variations No. 3 Hyde Vineyard is a polished, single-vineyard Chardonnay that marries California richness with Burgundian finesse. Sourced from the famed Hyde Vineyard in the cool, breezy Carneros area, known for preserving acidity and allowing slow, even ripening. This vintage is a brilliant expression of the historic Hyde Vineyard, with Wente clones planted in 1979 yielding a complex aromatic profile. Only 135 cases were produced, making it a scarce treasure.
Tasting notes reveal aromas of baked apples, lemon cream, hay, beeswax, integrated baking spices with streaks of matchstick. Other notes mention Meyer lemon, white peach, Anjou pear, chamomile, toasted hazelnut, brioche, and a faint sea-spray minerality. On the palate, it's medium-bodied and satiny, focused yet layered, with a silky, almost weightless texture framed by precise acidity.
