FEATURES
Chevreux-Bournazel is a ferociously trendy boutique Champagne house run by Stéphanie Chevreux and Julien Bournazel, known for their commitment to organic and biodynamic viticulture. They acquired a tiny 0.4-hectare parcel of old Pinot Meunier vines in Barzy-sur-Marne in 2012, which became "La Parcelle." This Champagne is a single-vineyard, single-grape expression, with annual production of less than 1,000 bottles, making it a rare find. The wines ferment with indigenous yeasts, are aged in old barrels, and bottled without dosage, resulting in Champagne that combines intensity and precision with natural vitality.
This non-vintage Champagne, made from 100% Pinot Meunier, offers a complex aromatic profile. Expect notes of toasted bread, red berries, sour cherries, peaches, Meyer lemons, spiced pears, and citrus, complemented by yellow flowers, jasmine, and biscuits. It presents a powerful palate with strong acidity and a mineral profile, a medium body, and a lively, linear texture. Further nuances include quince paste, sweet spices, poached pear, and a hint of coffee bean.
Food pairing suggestions (East/West matching wine tier):
This versatile Champagne pairs beautifully with a range of dishes. Consider it with shellfish, crab, and lobster. It also complements pork, other crustaceans, fatty fish like salmon or tuna, and soft to semi-soft cheeses. For a heartier match, it can even accompany stews.
