🏰 The 2022 Du Pelican Arbois Savagnin Sous Voile is a fascinating expression of Jura's unique winemaking, characterized by its 【oxidative aging under a veil of yeast (flor) that imparts distinctive nutty, spicy, and savory characteristics】. As a very young vintage, this wine is still in its infancy, destined for a long evolution. Expect complex aromas of walnuts, almonds, curry spices, and green apple, with a hint of fino sherry. The palate will be intensely dry and savory, with high acidity and a long, saline finish, offering a truly unique and acquired taste.
🍴 This distinctive wine is a perfect match for traditional Jura cuisine, such as Comté cheese, chicken with morels in cream sauce (Coq au Vin Jaune), escargots, or rich pâtés. Its savory notes also complement dishes with walnuts or strong, earthy flavors.
🥂 A wine for the adventurous palate and a true connoisseur's delight. Given its style, this 2022 vintage is extremely young and requires significant cellar time to develop its full complexity. It is built for very long aging, often for decades, and is likely not yet released or ready to drink. If you do acquire a bottle, store it properly and be prepared to wait.
BACKGROUND
Domaine du Pelican is a highly acclaimed estate in the Jura region, founded by Guillaume d'Angerville of the famous Volnay domaine. The winery combines Burgundian precision with Jura's unique terroirs. 'Sous Voile' refers to the traditional Jura method of aging wine under a veil of yeast (flor), similar to Vin Jaune. Made from the Savagnin grape, this wine offers intense, complex aromas of walnuts, curry spices, and green apple, with incredible acidity and length.
