🏰 The 2014 vintage in Languedoc generally produced wines with good freshness and balance. Alain Chabanon's L'Esprit de Font Caude 2014 is the flagship wine of the Domaine, a complex blend of Mourvèdre, Syrah, and Grenache (typically 45% Mourvèdre, 45% Syrah, 10% Grenache) from the Montpeyroux appellation. The Domaine is certified biodynamic by Demeter, reflecting a deep respect for nature. This wine boasts a deep red color and a nose evocative of wild herb-covered hills. On the palate, it is beautifully structured with well-balanced tannins, bursting with blackberries, autumnal fruit, and spice. It's rich and elegant, with notes of dark fruit and spices like pepper and nutmeg, and can also show earthy notes of leather. The wine undergoes a long maceration and 36 months of aging, including 24 months in French oak barrels, contributing to its depth and aging potential. 【Biodynamic certified flagship wine from Montpeyroux】.
🍴 This robust Languedoc red is an excellent companion for rich, gamey dishes such as venison casserole, wild boar stew, or red meat with classic sauces. It also pairs wonderfully with mature cheeses like Cheddar or Salers. For a more regional touch, try it with beef stew in Montpeyroux wine, Camargue bull tenderloin, or spit-roasted hare with braised chestnuts.
🥂 Ideal for a hearty dinner, a gathering with discerning palates, or as a special bottle to enjoy during the cooler months. Its complexity and structure make it a great choice for a wine club tasting focused on biodynamic wines or Southern French reds. It's recommended to uncork, or even better, decant this wine for at least 2 hours before serving at a temperature of 15°-17°C (59-63°F) to allow its full aromatic spectrum to unfold.
