🏰 The 1988 vintage, initially underestimated, has matured beautifully, proving early critics wrong with its structured tannins and lush, concentrated fruit. Clos des Mouches, a crown jewel of Joseph Drouhin since the 1920s, is located at the southern end of the Beaune appellation. Its name, meaning 'flies', originates from 'honey flies' (bees) that once inhabited this sun-drenched vineyard. The clay and limestone soils, with rocky upper parts and limestone/marl in the center, contribute to the wine's finesse. This outstanding wine displays a pale yellow color, evolving to a dark straw hue with age. It offers a complex floral nose of white lilac and white rose, opening to fruity aromas of grilled hazelnut and almond. With maturity and aeration, wonderful notes of white truffle, citron, honey, and nutmeg emerge. The palate is very lively, with rich texture, structure, and minerality, being round yet never heavy, leading to a harmonious fullness in the aftertaste. It remarkably allies the complexity and elegance of a Bâtard-Montrachet with the power of a Corton-Charlemagne. A vibrant acidity balances subtle nuttiness and honeyed richness, with persistent minerality and white pepper spice. Some older bottles may show bottle variation, with nutty notes or being past their prime.

Decanting is often recommended for older white 布根地 to allow sediment to settle and the wine to open up, but be mindful of its delicate nature; a short decant (15-30 minutes) or simply opening the bottle well in advance and letting it breathe in the bottle might be preferable to avoid over-exposure to air. Serve slightly chilled, around 12-14°C (54-57°F), to best appreciate its complex aromas and textures.
