🏰The 2021 Pacaud Vignerons Saint Veran La Cote is a 【charming Chardonnay from a small family-owned estate, showcasing the potential of a challenging yet well-balanced Burgundy vintage】. The 2021 Burgundy vintage saw reduced yields but produced well-balanced whites with lovely aromatics. This Saint-Véran, from 50-year-old Chardonnay vines on limestone soils rich in iron oxides, is vinified with indigenous yeasts and aged in oak and stainless steel. Expect a light gold color with golden highlights, powerful and intense aromas of ripe white and yellow fruit, subtle toasted notes, and a well-structured, mineral palate with chalky and flinty nuances. Other notes mention sweet yellow daisies, ripe yellow stone fruits, fresh lemon, and warm mineral.
🍴 This elegant white Burgundy pairs beautifully with shrimp and mange-tout pea risotto, Bleu de Bresse cheese, Beaufort cheese. It's also excellent with poultry in cream, seafood, cooked fish, and pressed cheeses like Cantal or Laguiole.
